Abstract
PURPOSE: To obtain green tea blended with soba (buckwheat) having improved nutrient, fragrance, etc., by soaking seed of unpolished soba in water, dewatering, boiling, drying, and peeling the shell to take out the seed with the original form left, followed by blending the soba with green the leaves which are prepared by selection through air, roasting, and precise selection, in an arbitrary ratio.
CONSTITUTION: Seed of unpolished soba from which impurities are removed by selection through air and washing with water is soaked in water for 20W50min, dewatered and boiled so that soba is completely gelatinized.
