Abstract
PURPOSE: To shorten the immersion time of soybeans, to facilitate and quicken the crushing of soybeans, and to reduce the quantity of bean curd refuse, in the preparation of "tofu" (bean curd), by immersing, crushing, and boiling husked soybeans in water, separating the boiled mixture to soybean milk and bean curd refuse, and preparing "tofu" from the soybean milk.
CONSTITUTION: Choice soybeans are dried, husked by pressing with a pair of elastic rolls, immersed in water for 4hr, and crushed with a grinder, mixer, etc. together with water to obtain a milky product. The product is boiled and separated into soybean milk and bean curd refuse by pressing. "Tofu" is prepared by adding a coagulant such as bittern to the soybean milk.
