Abstract

PURPOSE: To prepare a food similar to dried noodles, which can be cooked in a short time with little dissolution in water giving palatable noodles having smooth surface texture, using nonglutinous rice added with tapioca starch.
CONSTITUTION: A mixture composed of (A) ≥50wt% of nonglutinous rice flour, B≤50wt% of tapioca starch, and if necessary, (C) starch of grains, potatoes, and miscellaneous cereals, is added with water, and kneaded after or during steaming. The steamed mixture is formed to a belt, slitted to strips, and dried by a conventional process.
