Abstract
PURPOSE:To prepare laver for an artificial food, by boiling vegetables, milling the boiled vegetables, adding water, wheat flour, common salt, etc., kneading the resultant blend, then converting wheat into the form of laver, drying the obtained laver-like blend by through-flow drying and forming the dried blend into the shape of laver. CONSTITUTION:Vegetables, such as carrot, Japanese radish, broad-leaved mus tard of UME (plum), are boiled and harshness is removed. The resultant vegetables are then dehydrated and crushed in a mortar, etc. Water is subse quently added to heat and thoroughly stir the crushed material. Water, wheat flour, common salt, etc., are subsequently added to further knead the blend. The kneaded blend is then stirred on a slow fire until viscosity is increased to provide a wheat laver and carry out seasoning. The resultant laver is subse quently extended into a flat form to remove water. The obtained sheet is trans ferred onto a film of Krewrap(R) on a plate, dried by through-flow drying and formed into the shape of laver. The obtained product is used for food, such as coating for rolled SUSHI (vaneguard rice and fish) or hand-rolled coating, similarly to conventional toasted laver and suitable also as a preserved food.
