Abstract

PURPOSE: Seaweeds or vegetables are freeze-dried in vacuum and the product is added to the raw materials for making noodle to produce noodle containing large amounts of nutritions.
CONSTITUTION: Seaweeds such as "wakame" seaweed or vegetable such as spinach are previously frozon at -30W-40°C and they are placed in a vacuum to sublime off the frozen water in the food whereby they are dried. The dried product is crushed to a level of the maximum size of 2mm and added to the raw material of noodle such as wheat flour, buckwheat flour or starch by 2W3wt%, up to the maximum 30wt%.
