Abstract
PURPOSE: The base dough sprayed with alpha-form starch, small lumps of food and water on the surface and another dough with a kind of network parttern are laminated integrally, thus preventing the removal of food lumps and giving a kind of biscuit with good texture and taste.
CONSTITUTION: Water is added to rice, starch or other food material containing starch, they are boiled to form rice cake base 1, which is, when necessary, kneaded and milled with milling rollers 2 to give base sheet 8. Alpha-form starch powder, small lumps of food are scattered on the surface of the base sheet 8 and water is sprayed. In the meantime, another rice cake sheet that is milled by milling rollers 2' is cut transversely or diagonally to the advancing direction with cutting rotor 3 and drawn by controlling the conveyor speed to prepare a sheet with network pattern 9. Then, sheet 9 is piled on sheet 8 integrally, they are molded in a desired form, dried and baked.
