Abstract

PURPOSE: To manufacture sweet potato vermicelli having unique taste, flavor and texture, from sweet potato flour.
CONSTITUTION: Sweet potato flour (40%), glutenous wheat flour (30%), tangle powders (3%), water (21%) and salt (6%), are thoroughly kneaded, rolled to a sheet of 0.5cm thickness, 20cm width, and 100cm length, and slitted to fine strips each having a width of 0.3cm. The fine strips thus prepared are supplied as fresh vermicelli, or, if necessary, dried or boiled.
