Abstract
PURPOSE: To prepare a soluble instant food having improved taste, flavor, and texture of ingredients after reconstitution, comprising a base and ingredients integrated, by coating the dried ingredients with the base containing fats and oils which solidify at normal temperatures as a binder.
CONSTITUTION: Ingredients 2, e.g. dried cakes, mushrooms, vegetables, fish, and meat, are coated with the base 1 comprising wheat flour, starch, spices, and seasonings, and 10% or more of fats and oils (F), e.g. lard, beef tallow, and corn oil which solidify at normal temperatures, immersed in a hot solution of fats and oils, sugars, etc., cooled and formed into a given shape. The formed product is used for a soluble instant food, e.g. curry, soup, stew, and miso soup. To prevent the permeation of the base 1, ingredients 2 are preliminarily immersed in a solution of F, sugars, salts, or their mixtures 3, and cooled, or dehydrated and dried.
