Abstract

PURPOSE: A powder of KONJAK (devil tongue), starch food and water are mixed and calcium hydroxide is added to the mixture to produce a gel-like food material that has toughness, but is readily cuttable with teeth, and readily impregnated with seasoning solution.
CONSTITUTION: One pt. of KONJAK powder, 2W10pts. of starch food such as rice flour, wheat flour or starch powder and water are mixed and calcium hydroxide is added to the mixture and heated to produce the objective food material of KONJAK gel. The resultant product has better texture than conventional KONJAK and is readily seasoned to the inside, because the seasoning solution readily penetrates the food.
