Abstract

PURPOSE: To prepare a food like a Chinese noodle capable of exhibiting the characteristics equal to those of a Chinese noodle prepared by using an aqueous solution of potassium carbonate, by adding an ignited and roasted natural calcium carbonate to a raw material flour for the noodle.
CONSTITUTION: A natural product, e.g. a shell, eggshell or limestone, containing calcium carbonate essentially it roasted by the ignition at 1,200W1,300°C to give powder having a particle size ≤ preferably about 5μ. The resultant powder or its mixture with water in an amount of 1wt% or less, preferably 0.02W0.5wt%, as calcium, based on the weight of wheat flour, is added to a raw material flour for preparing a noodle.
