Abstract
PURPOSE: To prepare the title paste food which has pleasant feelings to the tongue and teeth characteristic to "konjak" jelly, and the taste of meat or fish, and can be easily seasoned, by mixing powder of the divil's-tongue or starch to meat or fish.
CONSTITUTION: Ground meat or fish is mixed with powdery devil's-tongue, starch, and seasonings, thoroughly kneaded until it becomes sufficiently viscous, and left to stand to dissolve the devil's-tongue powder into the mixture. Spices and a weak alkaline solution (e.g. aqueous solution of calcium hydroxide) are added to the mixture, the mixture is kneaded, formed to the desired shape, steamed, and if necessary, fried in oil.
