Abstract

PURPOSE: To provide the titled powder which can be regenerated to white sauce instantaneously only by mixing with water or milk and heating for a short time, by using a mixture of heat-treated wheat flour, powdery oil or fat, and powdery seasonings, as a base.
CONSTITUTION: A mixture of (A) heat-treated wheat flour containing 30W40wt% of gluten, (B) powdery oil or fat containing 30W80wt% of fat, pref. 5W40wt% of cream and 25W50wt% of vegetable fat, and (C) powdery seasonings comprising salt, sugar, chemical seasonings, spices, etc., is mixed with a mixer such as a fluidized bed granulator, granulated, and dried to the water-content of 2W5%.
