Abstract

PURPOSE: To prepare a granular soup and sauce food having improved dispersibility without adding an emulsifying agent thereto by extruding a mixture of a raw starshy material with a dispersing agent, e.g. lactose, dextrin or powdered wheat gluten, and an edible solid fat, and granulating the resultant extruded mixture.
CONSTITUTION: 30W50Wt% raw starchy material, based on the resultant granular product, raw starchy material, e.g. dried wheat flour or dried corn starch, is mixed with 10W40wt% dispersing agent, e.g. lactose, dextrin or powdered wheat gluten, and 15W35wt% edible solid fat, e.g. having a melting point of 40W50°C. The resultant mixture is then introduced into an extruding granulating machine while being kept at 20W50°C to give the aimed granular product.
