Abstract
PURPOSE: A composition for cake combination, consisting of a specific composition of a fase mix and a dessert mix, suitable to prepare snacks like bisuit or for dessert obtained only by blending the specific composition with milk, jiuce, water, etc.
CONSTITUTION: A base mix consisting of 50W90wt% baked food from wheat flour, 5W40wt% fats and oils and 0.5W40wt% consistency improver, a hydroxyilic protective colloid, and starch or its decomposition product are dissolved in hot water to give a solution, to which fats and oils having 25W45°C melting point and an emulsifying agent are added and emulsified. The prepared emulsion is dried and powdered to give powder fats (or oils). 20W60wt% the powder fats (or oils), 5W60wt% sugar, 1W40wt% consistency improve 2W40wt% milk protein, and one or two or more, preferably three compounds selected from the group consisting of calcium salt, phosphate, and polyphosphate are mixed to give a dessert mix containing 0.4W4wt% coagulant.
