Abstract
PURPOSE: Onion, carrot, mushroom, etc. are frizzled until the onion becomes translucent, then they are combined with salt and chemical flavors and placed into a sterilized vessel, thus producing a pilaf ingredient that can give a pilaf by a simple operation in a short time.
CONSTITUTION: A pan is warmed with a medium fire and butter or margarine is melted on it. As it gets melted, the fire is made stronger and onion, carrot, mushroom and etc. are frizzled on it. When the onion becomes translucent, salt, pepper, nutmeg and chemical flavors are added thereto for seasoning, and well mixed. Then, chutney paste is added, further an appropriate amount of boiled and naked shrimp, frizzled chicken or boiled or naked clam is added as the major ingredient. They are packed into a sterilized vessel, the air in the vessel is replaced with an adequate amount of liquid carbon dioxide to provide the pilaf ingredient. When a curray powder is added and boiled rice is used together, a dry-curry dish is obtained.
