Abstract

PURPOSE: Salted onion is dipped in vinegar and sweet sake and then incorporated with flavor and spice to produce said onion pickles useful as preserved food because of its freeness of pungent taste and bad smell of onion.
CONSTITUTION: Onion is peeled off and cut into adequate sizes and soaked in water. The pieces is salted, rinsed with water and dipped in vinegar and sweet sake. Then, they are mixed with flavors as Guinea pepper, mustard, garlic, chemical flavor, ginger, beefsteak plant, curry powder, lemon, sugar, sea tangle(konbu), etc., and one or more spices.
