Abstract

PURPOSE: To prepare seasoned "tokoroten" (vermicellilike strips made from agar- agar and served in a tangy soy sauce) which can be served only by opening the container and can be transported and solid at normal temperature, by seasoning "tokoroten" itself, and packing in an air-tight package together with a seasoning liquid.
CONSTITUTION: Seasoned "tokoroten" strips are prepared as follows: agar-agar is dissolved in tangle soup by heating to obtain thick agar-agar solution; the solution is mixed with a venegar-soy mixture containing vinegar, soy sauce, and if necessary, salt, sugar, chemical seasonings, etc.; the mixture is poured into a mold and coagulated by leaving at rest at normal temperature; and the gelatinized product is silt and cut to a desired length. The seasoned "tokoroten" is put into a container, poured with the above tangle soup and the vinegar-soy mixture, and sealed.
