Abstract
PURPOSE: To prepare assorted ingredients for adding to boiled rice, by cutting the raw materials to pieces of proper size, boiling down the raw material with a prescribed amount of seasoning, adding a proper amount of mixed seasoning liquid, and vacuum-packaging with a plastic bag.
CONSTITUTION: Raw materials such as champignons, shiitakes, carrots, burdocks, bamboo shoots, "konnjaks", etc., are cut to pieces having proper sizes, and boiled down to dryness with seasonings such as compounded "sake" and a chemical seasoning. The cooked materials are mixed with a proper amount of a mixture of seasoning liquid, obtained by mixing soy sauce, food oil, salt, etc., vacuum-packed in a plastic bag, and boiled in water at ≥80°C. The content of the above package is added to rice washed with water, and cooked to obtain wall seasoned boiled rice with assorted mixture.
