Abstract
PURPOSE: To obtain a potato starch composition capable of keeping the taste and flavor of fresh potato for a long period, by mixing starch to strained or mashed potatoes, and heating the mixture in a casing.
CONSTITUTION: 100pts.wt. of a mixture consisting of 25W50pts. of strained or mashed potatoes prepared from fresh potatoes by conventional process and 75W 50pts. of starch is mixed with about 150pts. of water. The composition is filled in a casing, heated at 70W90°C for 6W10min, and stored by freezing at 0W5°C.
