Abstract
PURPOSE: Slices of meat from which tough parts and fat parts are removed are softened, coated with a binder for food, piled, packed in a mold, pressed to bind into a shape, and frozen to permit the utilization of tough meat for steak.
CONSTITUTION: Hard parts and fat parts are removed from tough meat, which is sliced in an appropriate thickness.
