Abstract
PURPOSE: The starting material is fed in a band on stainless steel plates bearing a sheet of release paper on each surface which are arranged in a line on the endless belt, and is formed, further ingredients such as fish or shell are placed on the band, and they are steamed, forcibly cooled, then vacuum-packed to produce the special boiled fish paste bearing fish or shel on the surface.
CONSTITUTION: Fish meat 3 is kneaded together with seasonings 4 and the resultant starting material 7 is made to fall down in a band from the vessel 9 of the feeder 8 to stainless steel plates 14 bearing a sheet of release paper on each surface which are arranged in a line on the endless belt 12. Then, the rectangular frame 15 is pushed to the plate 14 to mold the starting material 7 and fish or shell 2 is flatly placed on the molded starting material, further, they are slightly pushed by the roller 17 hanging on the belt 12. The resultant plates 14 are piled up and contained in the refrigerator 20 to effect SWARI (a kind of gelation) at low temperature of 4W10°C. Then, they are steamed, forcibly cooled with a blower, the frame 15 and plate 14 are removed and the product is cut in a desired size 22. Each piece is vacuum packed 23, sterilized by heating, forcibly cooled to give the product.
