Abstract
PURPOSE: To prepare a nutritious coating on a fried dumpling stuffed with minced pork having improved quality, sense of eating and flavor, by adding a parched and ground peanut to a raw material for the noodle.
CONSTITUTION: A dried peanut is parched, and the pellicle is peeled. Common salt is then added thereto, and the resultant mixture is then thoroughly ground or further mixed with one or two or more emulsifying agents, pastes, emulsion stabilizers, noodle quality improvers, etc. The resultant mixture, water and common salt are added to a raw material, e.g. wheat flour or buckwheat flour, to prepare a coating on a fried dumpling stuffed with minced pork, coating on won ton (a Chinese flour dumpling with pork therein), uncooked noodle, steamed noodle, boiled noodle, noodle fried in oil or instant noodle by the conventional method.
