Abstract
PURPOSE: To prepare processed food having delicate taste and flavor of meat, easily, at low cost, by adding seasonings to a mixture of specific amounts of minced meat and ground fish or shellfish.
CONSTITUTION: (A) 30W70 Parts by weight of minced beef (or pork, chicken, etc.) and (B) 70W30 parts of ground walleye pollack (or hairtail, croaker, various shellfish, etc.) are thoroughly mixed together by a kneader to obtain 100 parts by weight of mixture, which is added with proper amounts of seasonings such as beef extract, salt, sugar, etc. If necessary, 3W5 parts of starch and about 1 part of soybean protein are added to the mixture before kneading. The starch imparts the mixture with consistency, and the soybean protein suppresses the migration of fat to the surface of the processed food.
