Abstract

PURPOSE: To prepare the titled food having excellent taste and flavor such as body and deliciousness similar to those of fatty meat and usable as SASHIMI (sliced raw fish meat) and topping for hand-rolled SUSHI (vinegared rice), by mixing minced fresh raw fish meat with a W/O-type emulsion containing tasty component.
CONSTITUTION: Minced fresh raw fish meat (e.g. tuna, bonito or salmon) is mixed with preferably 1W30wt.% of a W/O-type emulsion containing a tasty component (preferably liquid extracted from fishes or shellfishes) to obtain the objective food. Preferably, the oil and fat of the W/O-type emulsion has a melting point of 15W40°C and a solid fat index of 5W25 at 20°C.
