Abstract
PURPOSE: To improve the nutritive effect and processing characteristics of a food, by adding powdered "natto" (fermented soybeans) to wheat flour.
CONSTITUTION: Powdered "natto" is added to wheat flour, which is processed to prepared noodles, e.g., "udone" (wheat vermicelli), buckwheat, "gyoza" (a fried dumpling stuffed with minced pork), "shao-mai", pastry of a bun with a bean-jam filling, spaghetti, and bread.
