1383733 Baked foods R VIARD and M VIARD 30 Jan 1973 4617/73 Heading A2B In a method of manufacturing a flour composition for making bread, toasted bread, rusk and dietetic biscuits, wherein flours are kneaded in a vessel together with yeast, sodium chloride, water and vegetable fat, the resulting dough being allowed to rest and subsequently divided into balls or lumps which are allowed to rise and are finally baked, magnesium chloride is added to the composition, a mixture of flours comprising panification wheat flour, white wheat flour, rye flour and malted flour is utilized, and the following percentages, by weight, are used: panification wheat flour 22 to 23%; white wheat flour 32 to 34%; rye flour 3 to 4%; malted flour 2 to 3.5%; ordinary salt 1 to 1.2%; magnesium chloride 1.5 to 1.9%; vegetable fat 2.5 to 3.5%; yeast 1 to 1.2%, and water 35 to 38%.
