Abstract
1439233 Simulated stuffed baked potato casings E F GLABE and R L JOHNSTON [trading as FOOD TECHNOLOGY PRODUCTS] 8 Aug 1973 37520/73 Heading A2B A cup shaped shell for a simulated stuffed baked potato is made from a dough comprising by weight (a) 5 to 50% of dunum wheat semolina, (b) 0 to 35% potato peel flour, (a) and (b) together comprising 5 to 50%, (b) 5 to 50% dehydrated mashed potato granules, (c) 0 to 5% potato starch, (d) 1 to 5% glycerin, (e) 30 to 50% water. The shell is formed by extrusion through a U-shaped die, or by extrusion in a flat sheet and moulding. The wall thickness is 1/6" to 1/16". The shells are then dried, e.g. for about 10 minutes at 325 to 375‹F to a water content of 5 to 10%, and can then be stuffed. The filling may contain mashed potato, onion powder, milk, cheese, salt and pepper. Caramel may be used to colour the shells.
