Abstract

1440544 Snack food comprising fish TAT TONG (ALLAN) ONG 3 Sept 1974 [17 Dec 1973] 38394/74 Heading A2B A snack food is made by comminuting the flesh of fish and/or crustaceans (including squid), mixing with a starchy material at least half of which is cassava flour along with any desired flavouring agent, forming the mixture into articles of geometrical shape and cooking them, air-drying the cooked articles followed by further drying to a moisture content of 2-5% by weight until the product is hard and dense and has the appearance of uncooked pasta. The product may be deep-fried e.g. in vegetable oil at a temperature of at least 100‹C. The mixture may be shaped into balls and may be cooked by steam. Starchy materials which may be mixed with the cassava flour include rice flour, potato and yam starches. The further drying may be carried out by heating to a temperature of 43‹ to 49‹C.
