Abstract

PURPOSE: Rice together with ingredients is fried, formed into a shape, covered with a coating, then with crumbs and frozen, thus producing a frozen food that is relishable for everybody, excellent in shape retention and suitable for long-term storage.
CONSTITUTION: Washed rice is mixed with ingredients such as flavorings, vegetables or meat and they are subjected to frying and cooled. By selecting ingredients to be added, the product can be changed to currylike, chicken-ricelike (chicken and rice fried and seasoned with tomato catsup) or Chinese-style fried ricelike (containing egg, shrimps, etc.) dishes. The fried rice is formed into a desired shape such as triangular ball and each ball is covered with a coating consisting of wheat flour, whole egg, water, etc., and with crumbs. Then, the balls are rapidly frozen to produce the frozen food product.
