Abstract

A snack comprises pretreated fish processed into fragments which are then cooked. Conveniently the fish may be shredded and then baked or deep fried. The skin of the fish may be included.

Description

SPECIFICATION Improvements in or relating to foodstuffs THIS INVENTION concerns improvements in or relating to foodstuffs, and in particular relates to snacks prepared from smoked or other pretreated fish. The invention concerns particularly snacks, for example "bar snacks" produced from smoked salmon-especially the left-over portions of the sides of smoked salmon.
According to one aspect of this invention there is provided a snack comprising pretreated fish processed into fragments which are then cooked. According to one feature of the invention the fish may be shredded and then baked or deep fried.
According to another feature of the invention the skin of the fish, with the fish remains attached thereto, may be fragmented and cooked to provide a snack.
In one particular embodiment the invention comprises fragmenting, and in particular shredding, the remains of a part of a salmon including its skin and subsequently cooking, and in particular baking or deep frying, the shredded portions to provide a crisp edible fish snack. The fragments may be battered or otherwise coated and seasoned etc. before cooking.
According to another aspect of the invention there is provided a method of making a snack comprising passing pretreated fish through a shredder and cooking said shredded portions to form a plurality of discrete crispy snacks.
In order that the invention may be more readily understood one embodiment of the invention will now be described by way of example only.
In this example the remains of at least one side of salmon-after removal of the prime edible flesh portions of the salmon is fragmented by passing the remains through a shredding machine. The shredded portions are then passed to a deep fryer where they are fried to form a plurality of discrete crisp edible snacks. Collections of these snacks are then packaged for sale as "bar snacks".
It will be appreciated that whilst in this specific embodiment frying has been adopted for cooking, other cooking methods may be used-for example microwave cooking, baking and the like. Additionally whilst the remains of smoked salmon have been used including the skin, snacks could-if commercially practical- be produced from the more expensive prime flesh portions of the fish. Still further it is to be noted in this example smoked salmon has been used. It is possible that other pretreatments, or other pretreated fishes such as smoked trout and the like, could be similarly processed in accordance with this invention to provide attractive edible "bar snacks".
1. A snack comprising pretreated fish processed into fragments which are then cooked.
2. A snack according to claim 1 in which the fish is shredded and then baked.
3. A snack according to claim 1 in which the fish is shredded and then deep fried.
4. A snack according to any one of the preceding claims wherein the skin of the fish, with the fish remains attached thereto is fragmented and cooked.
5. A snack according to any one of the preceding claims in which the snack is formed from a part of a salmon including its skin which is cooked to provide a crisp edible fish snack.
6. According to claim 5 wherein the fragments are battered or otherwise coated.
7. A method of making a snack comprising passing pretreated fish through a shredder and cooking the resultant shredded portions to form a plurality of discrete crispy snacks.

SPECIFICATION Improvements in or relating to foodstuffs THIS INVENTION concerns improvements in or relating to foodstuffs, and in particular relates to snacks prepared from smoked or other pretreated fish. The invention concerns particularly snacks, for example "bar snacks" produced from smoked salmon-especially the left-over portions of the sides of smoked salmon. According to one aspect of this invention there is provided a snack comprising pretreated fish processed into fragments which are then cooked. According to one feature of the invention the fish may be shredded and then baked or deep fried. According to another feature of the invention the skin of the fish, with the fish remains attached thereto, may be fragmented and cooked to provide a snack. In one particular embodiment the invention comprises fragmenting, and in particular shredding, the remains of a part of a salmon including its skin and subsequently cooking, and in particular baking or deep frying, the shredded portions to provide a crisp edible fish snack. The fragments may be battered or otherwise coated and seasoned etc. before cooking. According to another aspect of the invention there is provided a method of making a snack comprising passing pretreated fish through a shredder and cooking said shredded portions to form a plurality of discrete crispy snacks. In order that the invention may be more readily understood one embodiment of the invention will now be described by way of example only. In this example the remains of at least one side of salmon-after removal of the prime edible flesh portions of the salmon is fragmented by passing the remains through a shredding machine. The shredded portions are then passed to a deep fryer where they are fried to form a plurality of discrete crisp edible snacks. Collections of these snacks are then packaged for sale as "bar snacks". It will be appreciated that whilst in this specific embodiment frying has been adopted for cooking, other cooking methods may be used-for example microwave cooking, baking and the like. Additionally whilst the remains of smoked salmon have been used including the skin, snacks could-if commercially practical- be produced from the more expensive prime flesh portions of the fish. Still further it is to be noted in this example smoked salmon has been used. It is possible that other pretreatments, or other pretreated fishes such as smoked trout and the like, could be similarly processed in accordance with this invention to provide attractive edible "bar snacks". CLAIMS
1. A snack comprising pretreated fish processed into fragments which are then cooked.
2. A snack according to claim 1 in which the fish is shredded and then baked.
3. A snack according to claim 1 in which the fish is shredded and then deep fried.
4. A snack according to any one of the preceding claims wherein the skin of the fish, with the fish remains attached thereto is fragmented and cooked.
5. A snack according to any one of the preceding claims in which the snack is formed from a part of a salmon including its skin which is cooked to provide a crisp edible fish snack.
6. According to claim 5 wherein the fragments are battered or otherwise coated.
7. A method of making a snack comprising passing pretreated fish through a shredder and cooking the resultant shredded portions to form a plurality of discrete crispy snacks.
8. Any novel feature or combination of features disclosed herein.
