Abstract

1350547 Proteinaceous snack NESTLE SA 25 July 1972 34711/72 Heading A2B Crisp snack products are made from a dough comprising 14-60% of protein material, e.g. fish, meat, vegetable, or microbial protein. 40-86% of carbohydrate, e.g. potato, corn, or wheat starch, and water, and 0-5% of flavourings and/or minerals the dough being extruded, frozen below -3‹C, sliced and fried. The water content of the dough is at least 45%. The fried slices have a moisture content of below 10% and have preferred compositions (dry weight basis) of 10-40% protein, 30-55% carbohydrate, 25-35% fat. The dough slices are fried at 170-200‹C for 30-50 seconds.
