Abstract
PURPOSE: To prepare boiled noodles having extremely excellent preservability, by using a lower fatty acid ester or a sugar amino acid decomposition product and glycine as antibacterial components, thereby suppressing the growth of heat-resistant spores of bacteria.
CONSTITUTION: Wheat flour is compounded with 0.05W0.1% of a lower fatty acid ester, e.g. ethyl caprate, ethyl laurate, etc. or 0.3W5% of sugar amino acid decomposition product, e.g. xylose amino acid decomposition product, formed to noodles by conventional means, boiled, drained, immersed in a solution containing 5W6% of glycine and having a pH of 3W4 for 30W60sec, drained, sealed in a heat-resistant plastic film, and heat-treated at 95W100°C for 30W50min.
