Abstract

PURPOSE: To prepare "sake" with low weetness and good body, containing non- fermentative oligo-saccharides as main constituents of sugar component, by using proper amounts of amylase which mainly produces maltose, a trans-glucosidase and a protease.
CONSTITUTION: Steamed rice is saccharified with an enzymatic reagent containing (A) an amylase which mainly produces maltose, e.g. malt amylase, mold- or bacterium- originated α-amylase, or actynomycetes- or bacterium-originated β- amylase, (B) a tansglucosidase which produces a non-fermentative oligo-saccharide from maltose, and (C) a protease. The titer of B is pref. 20W40% of that of A, and the titer of C is larger than 4 times that of A. The "moromi" (unrefined sake) thus obtained is added to a main "moromi" tank, and the brewing of the moromi is carried out to obtain "sake" with low sweetness and good body.
