Abstract

PURPOSE: When malted buckwheat is used to make "miso", the buckwheat flour containing α-form starch is added at the completion of the main fermentation and the post-aging is effected, thus giving the objective buckwheat "miso" with high brightness, well-balanced taste and freeness from the secondary fermentation.
CONSTITUTION: Unpolished buckwheats are treated to convert the starch into the α-form and the hard skins are removed, then the resultant buckwheats are malted to make "miso" wherein another buckwheat flour containing α-form starch is added to the fermentation mixture at the completion of the main fermentation, that is, at the point when the volume of the "miso" begins contracting after increasing by the gas formed by the fermentation, by 2W10, preferably 3W8% based on the weight of the "miso".
