Abstract

A method of inhibiting the breakdown of starch granules; and a process for easily, efficiently producing starch inhibiting the breakdown of starch granules as a starch-containing composition (starch preparations). In the practice thereof, a powdery mixture of starch and water-soluble hemicellulose, especially consisting of 99:1 to 70:30 (weight ratio) starch and water-soluble hemicellulose is subjected to moist heat treatment at 50° to below 100°C in a relative humidity of 50% or higher.
