Abstract
PURPOSE: To prepare a seasoning similar to fish soy, having extremely high dissolved nitrogen content, within a relatively short time, by the autolysis or enzymatic decomposition of fish or shellfish under specific conditions.
CONSTITUTION: Fish or shellfish used as the raw material is added with 0.5W 4wt%, pref. 2W3.5wt% inorganic salt such as sodium chloride, potassium chloride, etc., and at the same time, the pH of the raw material is adjusted to ≤4, pref. 2W3 with hydrochloric acid, acetic acid, etc. The raw material is subjected to, under the above conditions, autolysis, enzymatic decomposition by the addition of enzymes, or the combination of autolysis and enzymatic decomposition. After adjusting the pH of the decomposition product to nearly neutral, the product is sterilized and filtered by conventional methods.
