Abstract

PURPOSE: An antiseptic for improving the preservation of foods comprising lauric acid monoglyceride and a condensed phosphate, and the antiseptic method.
CONSTITUTION: 0.1W3 wt% of a mixture comprising (a) 1 part by wt. of lauric acid monoglyceride, (b) 1W100 parts by wt of a condensed phosphate, e.g. potassium or sodium metaphosphate, and (c) 0W50 parts by wt. of sorbic acid or its salt is added to foods during the production step.
