Abstract

PURPOSE: To prepare a stock for milk shake having storage stability, with a high egg yolk content, by sterilizing a yolk-containing emulsion of adjusted pH under heating.
CONSTITUTION: An emulsion consisting of milk mainly and preferably about 1.5W 2.5% calculated as the solid content of egg yolk is adjusted to a pH ≥ 6.8, preferably 6.8W7.2, sealed in a container, and sterilized by heating at 100°C or above.
