Abstract
PURPOSE: To prepare a browning inhibitor without damaging the flavor of a food, by mixing a substance containing collagen with a hydrolyzate obtained by hydrolysis of dextran with an enzyme.
CONSTITUTION: A substance containing collagen having an average molecular weight of 300W10,000 or a gelatin hydrolyzate or if necessary treated with a hydrosulfite is permeated through a mixed bed comsisting of a cation exchange resin and an anion exchange resin to give a decomposition liquid (A). On the other hand, dextran having an average molecular weight of 60,000W90,000 obtained by partial hydrolysis of natural dextran with a dilute acid is hydrolyzed with dextranase, and and then the dextranase is inactivated to give a decomposition liquid (B). 0.2W 50%, based on the gelatin in the decomposition liquid (A), the decomposition liquid (B) is mixed with the decomposition liquid (A) and kept at 30W40°C for about 1hr to afford a browning inhibitor for a food.
