Abstract
PURPOSE: To obtain a novel color former for cattle meat without fading even on heating, by using one or more types of a yeast fungus body, an autolyzate of the yeast fungus body, a specific treated yeast fungus body, e.g. a hydrolyzate of the yeast fungus body by a ribonuclease, etc. as an active constituent.
CONSTITUTION: A color former for cattle meat is prepared by using one or more types selected from a yeast fungus body, an autolyzate of the yeast fungus body, a hydrolyzate of the yeast fungus body by a ribonuclease, a hydrolyzate of the autolyzate of the yeast fungus body by the ribonuclease, a hydrolyzate of the yeast fungus body by a proteolytic enzyme and a hydrolyzate of the autolyzate of the yeast fungus body by the proteolytic enzyme as an active constituent. As for a method for forming a color in a cattle meat with the color former, the cattle meat is immersed in a solution wherein the color former is dissolved in a curing pickle for a given period. A color forming assistant, e.g. casein or an alkali caseinate, may be used together to further improve the color forming effect of the color former.
