Abstract

PURPOSE: To obtain a gelatinous food having excellent palatability, by adding fermented milk to the solution of powdery milk, and a gelatinzing agent reactive with milk protein, etc., and heating, homogenizing and cooling the mixture.
CONSTITUTION: A gelatinizing agent forming a gel by reacting with milk proteins, e.g. carrageenan, furcellaran, low-methoxypectin, etc., is mixed with agar, gelatin, a calcium salt, powdery milk, egg white, organic acid such as citric acid, saccharides, emulsifying agent such as sugar fatty acid ester, etc. in the form of powder, and dissolved by adding water or hot water. Fermented milk is added in an amount corresponding to 1.5W5wt% of the product, to the above solution, and the mixture is heat-sterilized, homogenized, filled in a container, and cooled to obtain a gelatinous dessert.
