Abstract

PURPOSE: To prevent the coagulation of milk component in the preparation of an acidic dessert food, by heating a mixture of an alkali-treated gelatin and milk- containing raw material, and acidifying the mixture with an organic acid.
CONSTITUTION: An alkali casein obtained by treating casein with lime, etc. to an isoelectric point of pH 4.7W5.1, or a mixture composed mainly of said alkali casein and containing LM pectin, carrageenan, etc., is mixed to and dissolved in the raw materials of dairy products. The mixture is acidified with an organic acid such as lactic acid, etc. or fruit juice under agitation, homogenized, srerilized, and cooled. The product is poured into a container to obtain a jelly food, or is frothed by stirring in an ice cream freezer, poured into a container and thawed to obtain a foamy cake.
