Abstract

PURPOSE: To prepare milk protein curd, which is a gelled food having excellent nutrient and processability, by using casein and whey protein as raw materials.
CONSTITUTION: A solution of protein mixture is prepared by dissolving a casein alkali salt and a soluble whey protein obtained from cheeze whey, casein whey, etc. Oil or fat such as butter oil, safflower oil, sesame oil, etc. is added to the solution, and the solution is emulsified and heat-treated. Then, the solution is mixed with a water-insoluble calcium salt or a coagulant such as glucono-δ-lactone, etc., poured into a proper mold, and allowed to cool to obtain the objective product.
