Дл получени низкожирного сыра молоко пастеризуют при 85-90°С, провод т коагул цию, затем белковую массу охлаждают с последующим внесением бактериальной закваски, содержащей Streptococcus cremorls 4415, Streptococcus cremorls 4420 и Streptococcus sallvaris 3023 или Streptococcus cremorls 4415.
