Abstract

PURPOSE: To prepare a fish-paste product having high gel strength, by adding vegetable oil emulsified with yolk to ground fish meat.
CONSTITUTION: An O/W-type emulsion is prepared by emulsifying vegetable oil with liquid egg yolk or with water and powdered egg yolk. The emulsion containing 0.3W6 parts by weight of the vegetable oil is added to 100 parts of ground fish meat, and the mixture is aged and boiled to obtain the fish-paste product.
