Abstract

PURPOSE: To prepare a palatable, heat-resistant O/W-type emulsified food, by emulsifying an oil component in an aqueous component in the presence of sodium caseinate, and mixing the yolk to the emulsion.
CONSTITUTION: An oil component such as edible oil and an aqueous component such as water, vinegar, and a solution or dispersion of water or vinegar containing seasonings, spices, etc., are emulsified by conventional process in the presence of sodium caseinate as an emulsifier. The emulsion is then added with the yolk and optionally an acidic aqueous component, and sterilized by heating.
