Abstract

PURPOSE:To prepare ''tempura'' (deep-fried food) having crisp and beautifully bursted coating, without causing the scald of the cook and staining of the environment, by using an aqueous solution of ethyl alcohol dispersed with lecithin as the coating batter liquid. CONSTITUTION:In the preparation of batter liquid by dispersing the conventional raw material for coating in water, an aqueous solution of 0.1-40wt% of ethyl alcohol dispersed with 0.01-5wt%, based on the solution, of lecithin and optionally other edible emulsifiers is used in place of the water. As an alternative method, the batter liquid is perpaerd by adding and mixing ethyl alcohol dispersed with lecithin and optionally other edible emulsifiers to a conventional batter liquid obtained by dispersing coating materials in water. ''Tempura'' is prepared by coating a food with the batter liquid thus obtained, and frying in oil.
