CONSTITUTION:Wheat flour as a main component is mixed suitably with another grain, starch, protein, fat or oil, natural gum, viscosity increasing agent, emulsifying agent, egg, expanding blowing agent, common salt, seasoning, etc. and the resultant mixture is then dissolved in a 0.1-40wt% aqueous solution of ethyl alcohol to give a ''tempura'' batter paste. A material for the ''tempura'' is then dipped in the resultant batter paste and fried in oil to afford the aimed ''tempura''.
