Abstract

PURPOSE: To prepare a solid food, containing fat or oil, and having improved flavor and palatahlity with a wide range of oil content without separating the oil, by emulsifying a fat or oil with a hen's egg and lactalbumin as an emulsifying a fat or oil with a hen's egg and lactalbumin as an emulsifying assistant, and heat-treating the resultant oil-in-water type emulsion.
CONSTITUTION: 25W85% fat or oil, e.g. soybean oil, rapeseed oil, cotton seed oil, palm oil or coconut oil, is roughly emulsified with 20% or less whole hen's egg and/or egg yolk and lactalbumin and further a natural gummy material in a deaerating type mixer, and the resultant emulsion is then passed through a colloid mill or high-pressure homogenizer to make the oil particles finer and more stable. The resultant emulsion is enclosed in a container and heated in hot water or steam at normal or higher pressure.
