Abstract

PURPOSE: To prepare an oil-in-water type mustard oil emulsified composition having an antimicrobial action, by using an oil containing isothiocyanates obtained from mustard powder as a raw material.
CONSTITUTION: Water is added to pulverized mustard seed, which is treated with myrosinase under heating and subjected to steam distillation to give a purified oil containing isothiocyanates, about 1W10wt% purified oil containing isothiocyanates is dissolved in an edible oil, or water is added to mustard seed and it is heated so that glucoside is decomposed into isothiocyanates, and it together with oils in the mustard seed is squeezed or extracted, to give fats and oils containing isothiocyanates. A composition comprising 5W80wt% of the fats and oils containing isothiocynates, 0.2W5.0wt% edible emulsifying agent, 0W5.0wt% emulsion stabilizer and the rest of water is processed conventionally into an oil-in-water type emulsified composition.
